【食材】:【泡芙面糊】:全脂鲜乳125cc;水125cc;无盐奶油110g;细砂糖5g;盐2g;中筋面粉140g;蛋220g;上色蛋液(全蛋打散)适量;【香缇伊鲜奶油馅】:动物性鲜奶油150cc;糖粉1小匙;香草荚半条;
法式泡芙的做法
牛奶倒入锅中pourmilkintothepot
糖倒入锅中sugarintothepot
盐倒入锅中saltintopot
水也加入waterisalsoadded
最後将无盐奶油也放进来Addunsaltedbutterattheend
开小火,用刮刀搅拌溶解糖、盐,并等待奶油融化Turntolowheatandstirwithaspatulatodissolvethesugar,saltandwaitforthecreamtomelt
奶油融化後,改用打蛋器持续搅拌至沸腾後立即关火Afterthecreammelts,switchtoawhiskandcontinuetostiruntilitboils,thenturnofftheheatimmediately
一口气将过筛後的面粉倒入Pourthesiftedflourinonebreath
把握黄金30秒,不断搅拌将面粉与液体混合Holdgoldenfor30seconds,stirringconstantlytocombinetheflourwiththeliquid
接着开中火,用刮刀或木杓翻炒面团1分钟Thenturnonmediumheatandstirfrythedoughwithaspatulaorwoodenladlefor1minute
将炒好的面团倒入搅拌盆,装上浆形搅拌头,中速搅拌30秒Pourthefrieddoughintothemixingbowl,installthepaddle-shapedmixinghead,andstiratmediumspeedfor30seconds
转低速,加入一颗鸡蛋,等鸡蛋与面团完全混合後再加入另一颗,直到鸡蛋都加入。Turntolowspeedandaddeggsonebyoneuntilalleggsareadded
鸡蛋加完後,开中速持续搅拌面糊Afteraddingtheeggs,turnonthemediumspeedandcontinuetostirthebatter
拆下搅拌浆,手动稍微搅打面糊然後举起,面糊呈现倒三角形表示已经可以。Removethemixingpaddle,beatthebatterbyhandandliftitup,thebatterwillappearasaninvertedtriangle.
将泡芙面糊装进挤花袋,在烤盘纸上挤出约直径3公分的圆形Putthepuffbatterintoapipingbag,andsqueezeoutacirclewithadiameterofabout3cmontheparchmentpaper
在面糊上刷上蛋液Brusheggwashoverbatter
烤箱预热到200℃,总烘烤时间40-45分钟,烘烤至10-12分钟时,需将温度调降至160℃Ovenat200°C,bakingtime40-45minutes,whenbakingfor10-12minutes,lowerthetemperatureto160°C
碗中加入冰块addicecubestothebowl
在冰碗上再放上一个空碗Putanotheremptybowlontopoftheicebowl
将动物性奶油倒入空碗pourcreamofanimaloriginintoanemptybowl
加入1小匙过筛的糖粉Add1tspsiftedpowderedsugar
再加入半条香草籽Addhalfavanillaseed
将奶油打到8-9分发Beatthecreamto8-9todistribute
鲜奶油装入挤花袋,小心将鲜奶油挤入泡芙中Putthewhippedcreamintoapipingbagandcarefullysqueezethewhippedcreamintothepuffs
泡芙做好啦~内馅满满,泡芙酥脆Thepuffsareready~thefillingisfullandthepuffsarecrispy
