炒鸭肉羹的做法
鸭肉切薄片Thinlyslicedduckmeat
竹笋切丝Shreddedbambooshoots
洋葱切丝shreddedonion
青葱切小段Slicedshallots
辣椒切小圈Chilicutintosmallcircles
蒜头切粗末Choppedgarlic
锅热加入1大匙油,放入蒜头、辣椒、青葱爆炒出香味Add1tablespoonofoiltoahotwok,addgarlic,chilli,andshallotsandfryuntilfragrant
接着放入一半洋葱丝,炒至洋葱熟软Thenaddhalfoftheshreddedonionandfryuntiltheonionissoft
洋葱熟软後加入鸭肉片炒至鸭肉变色Aftertheonioniscookedandsoft,addtheduckmeatandfryuntiltheduckchangescolor
接着加入600cc大骨高汤开大火煮滚Thenadd600ccbigbonestockandbringtoaboiloverhighheat
汤滚後转中小火,放入竹笋丝Afterthesoupboils,turntomedium-lowheatandaddbambooshoots
放入另一半洋葱丝Addtheotherhalfoftheonion
加入2小匙糖add2tspsugar
加入1小匙盐add1tspsalt
将调料与高汤拌匀Mixtheseasoningwiththebroth
再开大火将汤再次烧滚,并盖上锅盖煮5分钟Bringthesouptoaboilagain,coverthepotandcookfor5minutes
5分钟後掀开锅盖,确认汤头是否符合自己的口味,是要需要再添加糖或盐After5minutes,openthelidandcheckwhetherthesoupmeetsyourtaste.Itisnecessarytoaddsugarorsalt.
缓慢加入太白粉水进店勾芡至适当浓稠度SlowlyaddTaibaipowderwatertothickentoproperconsistency
