荫豉肉的做法
小里肌肉200公克,切长块状Xiaolimuscle200grams,cutintolongpieces
腌渍~酱油1小匙Pickled~soysauce1tsp
腌渍~米酒2小匙Pickled~ricewine2tsp
用筷子顺时针搅拌至酱油与米酒被里肌肉吸收Stirclockwisewithchopsticksuntilthesoysauceandricewineareabsorbedbythemuscles
腌渍~再加入少许五香粉Pickled~addalittlefive-spicepowder
用手抓拌,将里肌肉与五香粉拌匀Stirwithyourhands,mixthemuscleandfive-spicepowder
腌渍~加入1/3颗蛋量的蛋液Pickled~add1/3eggliquid
用手抓拌,让蛋液均匀裹在里肌肉上Mixwithyourhandssothattheeggwashisevenlycoatedontheinnermuscles
腌渍~加入1又1/2大匙地瓜粉Pickled~add11/2tbspsweetpotatopowder
抓拌均匀後放置一旁备用Mixwellandsetaside
红辣椒2条切小圈2redpepperscutintosmallrings
青葱30公克,切小段30gshallots,cutintosmallpieces
豆豉1大匙,用水浸泡1tbsptempeh,soakedinwater
九层塔叶10公克,洗干净Basilleaves10grams,washed
油锅加热到放入竹筷後,筷子周边起大泡泡Whentheoilpanisheateduntilbamboochopsticksareputin,bigbubblesformaroundthechopsticks
将腌好的里肌肉放入锅中油炸40秒Putthemarinatedporkbellyintothepanandfryfor40seconds
40秒後,捞出沥干备用After40seconds,removeanddrain
将浸泡好的豆豉捞出Takeoutthesoakedtempeh
锅中保留1大匙的油,加入浸泡好的豆豉Keep1tablespoonofoilinthepot,addthesoakedtempeh
再1/2大匙香油,炒出香味Another1/2tbspsesameoil,fryuntilfragrant
加入红辣椒圈及青葱段,爆香Addredpepperringsandshallots,sautéuntilfragrant
将油炸好的里肌肉放入,拌炒40秒Putthefriedporkbellyinandstirfryfor40seconds
调味~1大匙米酒Seasoning~1tbspricewine
调味~1又1/2小匙酱油膏,炒匀Seasoning~11/2tspsoysaucepaste,stirwell
调味~加入1/2小匙糖,翻炒一下Seasoning~add1/2tspofsugar,stirfry
调味~加入1/4小匙乌醋,炒匀Seasoning~add1/4teaspoonblackvinegar,stirwell
调味~将1大匙米酒沿锅边淋下Seasoning~pour1tablespoonofricewinedownthesideofthepot
放入洗干净的九层塔Putinthecleanednine-storypagoda
炒出香味後~荫豉肉就完成了Afterfryingthearoma~theyammeatisfinished
