炒梳片鮮筍的做法
大里肌肉片醃漬後上漿。小黃瓜梳子片入沸水滾7秒後泡冷水冷卻、瀝乾;紅蘿蔔水花片入沸水滾25秒後撈起。桶筍梳子片過沸水15秒;泡冷水10分鐘以上,去酸味後瀝乾。大里肌肉片入沸水拌散小火滾60秒至熟後撈起。起1.5T油鍋,小火爆香蒜片後撈棄;集中所有食材撒上調味料,中大火快速拌炒後起鍋盛盤。
