【食材】:鸡胗(或凤胗)180g;【腌料】:盐1/4小匙;糖1/2小匙;胡椒粉1/4小匙;米酒1/2小匙;麻油1/2小匙;【裹粉】:蛋1个;太白粉(马铃薯粉)1小匙;
软煎凤胗~好吃下酒菜的做法
鸡胗用面粉抓洗後,用大量清水冲洗干净Afterthechickengizzardisscratchedwithflour,rinsewithplentyofwater
在鸡胗上划刀,然後切成薄片Scorechickengizzards,thenslicethinly
加入盐,抓匀,让鸡胗入点底味Addsalt,grabitwell,letthechickengizzardsgetalittlemoreflavor
再加入糖addsugar
加入胡椒粉,再次抓匀Addthepepperandrubagain
再加入米酒去腥Addricewinetoremovethefishysmell
最後加入麻油增香Addsesameoilatlast
蛋打散成蛋液,加入太白粉调匀Beateggsintoeggliquid,addTaibaipowderandmixthoroughly
锅热後倒入油,将腌渍好的鸡胗裹上蛋液,放入锅中煎Afterthepanishot,pourintheoil,coatthemarinatedchickengizzardwitheggliquid,andfryitinthepan
煎到两面焦黄即可Fryuntilbrownedonbothsides
将煎好的鸡胗放到网架上滤油Putthefriedchickengizzardsonthewirerackandstraintheoil
