蒸一品雞排的做法
馬蹄瀝水後與蔥、薑一起剁細碎。瘦肉剁泥,蝦去殼及頭尾處理乾淨用紙巾吸乾水分然後剁泥,兩者混合,加入1/2t鹽攪拌至有點黏性,再加入剁碎的蔥、薑、馬蹄及調味料A一起拌勻成肉餡。雞胸去除骨頭,太後的地方片掉一些,然後在上面縱橫切,後加鹽與酒稍微醃製。攤開雞胸肉,撒上少許太白粉,將肉餡在上面抹平、鑲入,共兩片。用上蒸鍋以大火蒸12分鐘至熟後取出。將每塊雞排切成規則的塊狀即可擺盤。
